Visiting the Farm
1. Where are you located?
We are located at 52 Shearers Road, Hanging Rock, NSW, approximately 20 minutes from Nundle.
2. What are your opening hours?
- Farm-gate Shop (and café offering tea, coffee, cake):
• Monday to Friday: 10:00 am – 2:00 pm
• Sunday: 10:00 am – 4:00 pm (lunch served from 12:00 pm; bookings essential)
• Saturday: Closed - Guided Farm Tours:
Available Monday to Friday at 11:00 am, conditions permitting; booking essential. - Café Services (within farm-gate shop):
Operate under the same hours as above, with lunch from 12:00 pm on Sundays only (bookings essential).
3. How do I get there?
Accessible via standard vehicles. Note: some unsealed roads are involved—check winter conditions as snow may occasionally affect access.

4. What species of trout do you raise?
We raise rainbow trout (Oncorhynchus Mykiss), prized for their clean flavour and firm texture.
5. Is your trout sashimi-grade?
Yes — we produce sashimi-grade fillets that are safe and flavourful when enjoyed raw.
6. Are your farming practices sustainable?
Absolutely. We use pristine spring-fed water and careful, environmentally considerate farming approaches to ensure both fish health and ecological balance.

We offer a range of products including:

- Artisan smoked poultry, beef, venison (via our Nundle Smokehouse)

8. Where can I buy your products?
Our products are available at the farm-gate shop, as well as from select outlets in New South Wales and at regional events or farmers’ markets.
9. Do you supply wholesale?
Yes — we supply to restaurants, gourmet food stores, and distributors. Please contact us directly for wholesale details.

Yes — our smoked trout and other products have received recognition, including multiple gold and silver medals and a Champion Trout Product award.
Product Handling
11. Do I need to cook smoked trout?
No — our smoked trout is fully cooked during the hot smoking process and ready to eat. It’s perfect on its own or used in salads, platters, pastas, and canapés.
12. How should I store your products?
Keep all items refrigerated at or below 4 °C. Once opened, consume within 3 days.
13. What is the best-before date / shelf life?
- Fresh whole trout: up to 7 days refrigerated
- Sashimi-grade fillets: up to 7 days refrigerated, vacuum-sealed, unopened
- Hot smoked trout fillets: up to 6 weeks refrigerated, vacuum-sealed, unopened
- Rillette & patés: 2–4 weeks refrigerated, sealed
- Biltong: several weeks when stored in a cool, dry place
Always refer to the Best Before date on the label for accuracy.
14. Can I freeze your products?
Yes — freezing retains quality well:
- Fresh trout & fillets: up to 3 months
- Smoked trout: up to 3 months
- Rillette & patés: up to 1 month (texture may soften slightly after thawing)
For best results, thaw items slowly in the fridge.
15. Are your products gluten-free?
Yes — most of our products are naturally gluten-free. Always verify by checking the individual product label.

16. Do you offer shipping or delivery?
Yes — chilled courier delivery is available within New South Wales, depending on the product and destination. We ship Biltong and Droewors throughout Australia.
17. Can you cater for groups or tours?
Absolutely — we welcome group bookings with advance notice.
